What’s my superpower? I can make sweets disappear in a flash! So what could be better than a nolen gur er sondesh, especially to a Bengali, when it's cold outside and you're sitting on your couch watching television as winter creeps in? The eternal love for sweets (misti) is unmatched; whether it's a festival or not, when it comes to misti, the moment itself turns into a festive. This article discusses that everlasting love of misti by bengalis, who provided such sweets we are grateful for.




The Jal Bhara Sandesh, sometimes referred to locally as Jol Bhora, is a distinctive Bengali sweet that epitomises West Bengali culture worldwide. It is one of the traditional sweet delicacies of Bengal. This confection is created with homemade cottage cheese, sugar, and jaggery.


The key invention of Surjya Kumar Modak in 1818 involved creating an oasis by putting rose syrup into the sandesh. At that time, Surjya Kumar Modak was a well-known confectioner in Eastern India. Jalbhara Talsansh Sandesh was the name of the freshly created sandesh. And now its more popular by the name Jalbhara Sandesh.


One of Bengal's unique traditional treats is called jolbhora and is called jalbhara sandesh. On the other hand, the name "nolen gur" alone is enough to evoke sentiment among all Bengalis. Without nolen gur or date palm jaggery, winter isn't complete.When"nolen gur"and "jalbhara" are combined, the result is the ultimate delicacy that embodies the rich history and tradition of bengali mishti.

Specially when it comes to JalBhara Sandesh

The JalBhara Sandesh, often referred to as Jol Bhora regionally, is one of the traditional Bengali sweet desserts and is a symbol of West Bengali culture around the world. It has a luscious centre and is a Sandesh. It resembles the Indian version of lava cake and tastes like cottage cheese fudge with a juicy centre. Due to the liquid jaggery inside. Jol (Water) Bhora (Filled) is a name that speaks for itself in this context. This unique Bengali treat is made of Nolen Gur, which is jaggery that has been produced from dates, or Khajur Gur.


A delicacy made with milk and sugar that comes from the Bengal region in the eastern part of the Indian subcontinent is called Sandesh Bengali: Shôndesh, Rather than using milk directly, some sandesh recipes call for the use of chhena or paneer,which is produced by curdling milk and separating the whey from it. Some residents of the Dhaka area produce a softer variety of sandesh known as pranahara, which is prepared with mawa and yoghurt. Pranahara's name means "heart thief." Some people believe the Gupo/Gufo style of sandesh from Guptipara to be the "first branded sweet of Bengal."

Sandesh and its history

The Ramayana by Krittibas and the verses of Chaitanya are two examples of mediaeval Bengali literature that describe the sweet meal known as sandesh. However, this original dish's ingredients have changed.which is still a mystery.This meal was probably distinct from the contemporary sandesh made with chhena and kheer that has been solidified.


Also Paran Chandra Nag founded Bhim Chandra Nag in Bowbazar, one of Kolkata's busiest sweet stores and the birthplace of sandesh, in 1826.

When exactly Sandesh began referring more frequently to the chhena-based sweet than the kheer-based sweet is unclear. However, it is known that during the second half of the 19th century, the term "sandesh" was frequently used to describe the sweet made from chhena.

Chhena or cottage cheese can be used to make sandesh. The makha sandesh"makha" means "kneaded"is the most basic type of sandesh found in Bengal. It is made by softly tossing chhena with sugar over low heat. It is known as Kanchagolla when it is formed into balls kancha means "raw" and golla means "ball". For more intricate and complicated.

The chhena is produced sandesh, dried and pressed, flavoured with fruit, and occasionally even coloured, and cooked to various consistencies. Sometimes it is shaped into conch shells, elephants, or fish after being filled with syrup, blended with coconut or kheer, and baked. Nolen gurer sandesh is a different variation made with gur or jaggery. It is renowned for having a nolen gur-derived brown or caramel colour.
